Fino en Rama
A rare Fino drawn from just a few barrels selected from the Tío Pepe Solera, each showing sustained flor and around six years of biological ageing. The nose is salty and mineral with chalk, citrus peel and tender yeast complexity. On the palate it’s bone dry, fresh and saline with crisp acidity and a palate-cleansing brine that lingers with hints of hazelnut and green olive. Light golden colour, clean and refined.
Serve ice cold with fresh oysters, boquerones or sushi. Great with grilled sardines or citrus-dressed crab.

Some things are better unfiltered. Fino en rama definitely is. Blatantly pure and fragrantly honest. She retains flavours and complexities ironed out in so many others. Exceptionally well to entice guests to sit down for a summer lunch in the garden.
Goes well with shellfish and fish, especially salty tastes (anchovies) or even raw (sashimi)
