This Manzanilla offers an aroma of chamomile and has matured for five years in a solera system. The flavor profile is light, with a full body and a dry finish. The balance between simplicity and complexity makes it a versatile wine.

About the winery

One of the oldest wineries in the Jerez region, Valdespino began wine production in the 13th century under Don Alfonso Valdespino. Today it is part of Grupo Estévez and is known for its traditional production methods.

Vineyards and production

The grapes come from the Macharnudo Alto vineyard, 5 kilometers northeast of Jerez, at an altitude of 135 meters. The albariza soil, rich in lime, is characteristic of this region and ensures excellent water retention. After harvest, the wine ferments in stainless steel tanks, followed by biological maturation under a layer of yeast, ‘flor’, for more than 5 years. This happens in a system of 6 criaderas and the famous solera ‘Misericordia’.

Valdespino Deliciosa Manzanilla is a dry, fresh and salty wine. It offers a refined taste experience, similar to La Guita, but with a softer and more elegant palette.
