Palo cortado Viejo C.P.

Palo Cortado

Valdespino being one of the few bodegas to make Single Vineyard Sherries, this Palo Cortado Viejo C.P.  is a 100% Palomino Fino from the Macharnudo Alto vineyard. It is drawn from specific barrels of Valdespino’s Fino Inocente and Amontillado Tio Diego. Traditionally, this Palo Cortado was being aged in Calle Ponce and the average age of the bottled wine is 25 years.

The color is golden, light amber and the nose is reminiscent of a beautiful old aged wine with sweet vanilla, iodine, bitter oranges and delicate spices. The palate is clean and delineated, subtle and on the elegant side of Palo Cortado, ending very dry in a great and lengthy aftertaste.

Valdespino and Equipo Navazos (these 2 houses work closely together) have been dubbed the ‘the Romanee-Conti of Jerez’ by the Wine-Advocate (Parker) and represent quality and tradition at the top of the Sherry hierarchy. The winery, soleras and brands are old, registered in 1875, but with documentation of their commercial and winemaking activities going back to the 13th century.

It’s hard to exactly pin Palo Cortado down, that’s why most have stopped trying. Surprising complexities balanced with delicate curiosities. Bitter orange and citric caramel make a truly unique companion for equally elusive courses or a light cigar to mirror one’s soul in and contemplate adventure.

Goes well with nuts, cured cheeses, stews and gelatinous meats like bull’s tail or cheeks
