Amontillado
From one of Emilio Hidalgo’s oldest soleras, El Tresillo begins life as Fino before extended oxidative ageing yields an amber-tinged Amontillado Fino. The nose is warm with toasted almond, brine, honeyed citrus and subtle spice. On the palate it’s dry and layered, showing depth without heaviness, bright acidity and a lingering savoury finish. The texture is smooth, with an elegant balance of nutty warmth and coastal minerality.
Serve with roasted scallops, wild mushrooms, aged cheeses or a fennel and orange salad.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.
Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
