Amontillado
Visiting Valdespino is simply an unforgettable experience. Not just because of their impressive cellar with an enormous amount of barrels stacked in rows of criadera’s for the incredibly extended ageing of their Sherries. Also when being allowed a peak in their art collection with a mere 100 engravings by Pablo Picasso and the works of other renowed Spanish artists like Salvador Dalí and Miró.
Valdespino is also about the only bodega in Jerez that makes ‘Single Vineyard Sherry’s’. Of which the Amontillado Tio Diego is a prime example. For this fine Amontillado the Palomino fino grapes are from the Macharnudo Alto vineyard.
Combining this with manual harvesting, acient producing methods and extensive ageing (14 years in the case of Tio Diego), they ensure and exceptional quality for their wines.
This Amontillado is amber colored. Maintaining a clear reference to the ripening under the flor, with the addition dried hazelnut and an elegant toffee caramel tones from the oxidative ageing. Being very dry and well balanced, the Tio Diego Amontillado is a prime example of a refined, mature sherry.
A perfect aperitif as well as gastronomic company at the dinner table.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.
Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
