Amontillado
Navazos releases a very old wine from time to time and this time it is the turn of an Amontillado from Montilla-Moriles, produced with Pedro Ximénez grapes and from the winery Pérez Barquero. It is presented as NV La Bota de Amontillado 73 “Bota Aniversario.” These old wines are always very concentrated and powerful. Although it is bottled with approximately 21% alcohol, this wine is probably not fortified and the alcohol content is achieved through pure evaporation and concentration through old age. This gives the character of a very old wine with hints of noble woods and lots of notes. The palate is powerful, with volume, sharpness, elegance, intensity and a very long finish and when you close your eyes you can taste and smell the scent of the sea at low tide. A unique wine. 1,100 produced half bottles.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.
Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
