La Bota de Amontillado Montilla Nº 117

The NV La Bota de Amontillado Montilla 117 is a new Amontillado from Montilla-Moriles that has never been bottled before. Selected from the cellars of Pérez-Barquero, the wine has an average age between 25 and 30 years, not fortified but bottled at 20% alcohol by pure concentration by evaporation. Since the Fino that forms the basis of this wine has never been fortified. It is the tradition in Montilla.

 

It is a middle-aged Amontillado with textbook characteristics and evolution of the Fino Amontillado, but with about 10 to 12 years more maturity. It’s nutty, sharp, intense and juicy. With a salty, iodine twist. This is a bottling from the summer of 2022. Only 3,000 bottles were produced.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.

 

 

Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
