San Emilio is Lustau’s splendid Pedro Ximénez. The statement ‘Muy dulce’ or ‘very sweet’ on the label is because of the traditional treatment of the Pedro Ximénez grapes; after harvest they are dried in the sun until they are practically raisins.
After this and fermentation, the wine is aged 12 years in the beautiful bodega in the heart of Jerez de la Frontera. Resulting in a beautifully concentrated Pedro Ximénez.
A deep and dark mahogany colour with iodized edging. Flavours of raisins and spices while maintaining floral and citric notes. Full and long on the palate. Extremely sweet, with a pleasant acidity.

PX, the King. A character so intense and outspoken it daunts the brave and silences the loud. His incredible sweetness is a formidable opponent. Better enjoyed with dessert, or some dark chocolate, than challenged to a game of chess in the belvedere.
Goes well with desserts based on slightly bitter chocolate, with ice-creams and blue cheeses of great intensity, such as Cabrales or Roquefort
