Inocente is the famous and awardwinning Fino by Valdespino. The bodega being one of the few bodegas to make Single Vineyard Sherries, Inocente is a 100% Palomino Fino from the Macharnudo Alto vineyard. For ageing Fino, the minimal amount of criaderas, before entering the solera, is 3. In Inocente’s case, Valdespino uses 11 criaderas to allow the wine to reach its full potential.
This prolonged maturation gives the Inocente a great complexity, structure and concentration. The sherry is straw yellow in color. Delicate and complex, with clear almond tones. The taste is surprisingly soft, nicely round with a slightly greasy structure. The wine has enough volume yet remaining fresh, slightly salty with a long aftertaste to enjoy.
