Pedro Ximénez
Beautiful PX Sherry in an intense, sweet style and a beautiful dark brown color. Aged in American oak according to the Solera system for more than 5 years. On the nose delicious aromas of toffee and orange. On the palate mocca, orange and dark chocolate. Goes very well with blue cheese, and with desserts with chocolate or coffee.
This sherry comes from vineyards north-northwest of Jerez, from the well-known chalky white Albariza terroirs, consisting of lime, clay and pebble. Alba means white, the bottom is therefore dazzling white (the sunlight is reflected) and very calcareous. In the extreme case, the soil contains as much as 80% lime. The limestone soil is very porous and absorbs rainwater well, allowing the vines to find moisture in the deep soil layers during the dry periods.
Bodega El Maestro Sierra was founded in 1830 by one of the best barrel makers of the time, master carpenter Jose Antonio Sierra. It wanted to make Sherry itself, which at that time, the 19th century, was mainly a noble affair. Meanwhile, El Maestro Sierra is without a doubt one of the top of the almacenistas and is owned by one of the oldest stocks of sherry, a real treasure trove. Cellar master Juan Clavijo has been working here for more than 50 years according to the old traditions, where everything is done with the hand goes. He determines which wines become a Fino, which an Amontillado, etc. The unique location in Jerez, the purchase of only the best grapes from the best farmers in Jerez and the very old stock of Sherry (soleras of over 100 years old) make this house a a unique one.
Fun fact: The label features the nobility’s hunt for the fox (Maestro Sierra). The month and year of bottling are stated on the back label of each bottle. For even more fun Sherry Facts, look here .
Appellation: Denominación de Origen Jerez-Xérès Sherry. This sherry is made from Pedro Ximenex grapes.
After opening, if stored in a dark and cool place, it can be kept for another 3 months.

PX, the King. A character so intense and outspoken it daunts the brave and silences the loud. His incredible sweetness is a formidable opponent. Better enjoyed with dessert, or some dark chocolate, than challenged to a game of chess in the belvedere.
Goes well with desserts based on slightly bitter chocolate, with ice-creams and blue cheeses of great intensity, such as Cabrales or Roquefort
