Amontillado
This artisanal Amontillado from the Pago de Macharnudo begins under flor and finishes with prolonged oxidative ageing, yielding amber colour and layered character. The nose shows toasted almond, dried orange peel, honeyed notes and subtle spice. The palate is dry yet rich with saline brightness, firm acidity and a long, savoury finish that feels both elegant and powerful. Pair with grilled meats, rich poultry, hard aged cheeses or porcini risotto.
A beautiful choice with roasted nuts or citrus-zest-dusted olives.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.
Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
