Fino en Rama
A rare limited-edition Fino drawn from just one carefully selected barrel in the Tío Pepe solera, aged around ten years under flor and showing the boundary between Fino and Amontillado with precision. The nose is complex and layered with chalky flor character, gentle dried fruit, camomile and a touch of orange peel. On the palate it’s dry yet creamy and saline, with bright acidity and an almost unctuous texture that lingers with spice and subtle bitterness.
Pair with grilled red tuna, rich seafood stews or roasted game birds. Great alongside salted almonds or aged cheese.

Some things are better unfiltered. Fino en rama definitely is. Blatantly pure and fragrantly honest. She retains flavours and complexities ironed out in so many others. Exceptionally well to entice guests to sit down for a summer lunch in the garden.
Goes well with shellfish and fish, especially salty tastes (anchovies) or even raw (sashimi)
