The Macharnudo Alto vineyard, which covers 56.2 hectares, is planted with the Palomino Fino for the Inocente Fino. Valdespino is the only one who makes Single Vineyard Sherries in Jerez. The white soil is called “albariza” and is very calcareous. Valdespino is also qualitatively distinctive in the way it produces its sherries: all Valdespino sherries are fermented in used wooden barrels (much more work than using stainless steel as all other producers do nowadays). In the bearing system with soleras and criaderas, the Consejo Regulador uses 3 criaderas for Fino sherry. Valdespino uses Inocente for the Fino. This long-term maturation gives the Inocente more complexity, structure and concentration. The sherry is straw yellow in color. Delicate and complex, with clear almond notes.
