Manzanilla Pasada
Pale yellow. Intense, open nose. Notes of old wood, a hint of withered flowers and dried fruit. Delicate hints of biological aging. On the palate it’s fleshy, very dry, with plenty of weight, excellent acidity, and a good mid-palate with a slightly bitter finish.
Pairing: Mojama, Pickled Anchovies, Salted Cod, Cold Soups (Ajo Blanco and Salmorejo), Cold Cuts and Anchovies. Sushi, Vichyssoise, Ceviche, and Tapenade.
