Williams & Humbert Jalifa 30-Year Amontillado VORS comes from a solera founded in 1821, spending at least 8 years under flor and a further 22 years in oxidative aging. A truly venerable Amontillado. It pours deep golden brown with a mahogany glow. The nose is seductive and broad, combining roasted hazelnuts and almonds with apricot, cinnamon, caramel, dry spice, and a whisper of sea breeze. On the palate it’s full‑bodied yet elegant. Bone‑dry with vivid acidity, layers of salted caramel, lemon‑taffy, olive brine, and a long, persistent nutty finish.

 

Superb with aged Manchego or cheddar, cured meats, marinated anchovies, artichokes, game, or even dark chocolate dessert. The wine’s intensity, salinity, and brightness balance rich or umami-forward dishes beautifully.

Amontillado is the best of both worlds. Starting life under a protective layer of flor, casting it off later to fully experience the world. Enjoyed on a late summer evening, or halfway through dinner. Expect to be pleasantly entertained by its dry finish and aftertaste of nuts and wood.

 

 

Goes well with soups, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses, vegetables such as asparagus and artichokes
