Fino en Rama
The Tio Pepe and Rama is the exclusive variant of the Fino Tio Pepe of the beautiful house González Byass. The ‘Tio Pepe and Rama’ is a sherry in its purest form because it is unfiltered and therefore comes straight out of the barrel. Every year the best barrels are selected for this and a limited number is released. It is a limited edition, a blend of finos from specially selected, at least 3-year-matured barrels of the Rebollo (a very dark and moist bodega that produces the most concentrated and full finos) and Constancia (classic finos with a crisp citrus aroma) . Of the 600 barrels, around 60, with the thickest layer of flor, are found to be good enough.
“En rama” is an expression that was once used to refer to wine in its most delicate state, before the normal processes of stabilization and filtering. “En Rama” expresses the unique character of Sherry: the penetrating aromas of the cellars and the intensity of the veil of “flour”, the yeast that interacts with the wine and gives it a unique and delicate character.
The distinctive character of the flor under which the wine has aged is immediately noticeable in the nose. Furthermore, nice aromas of nuts, almonds and yeast On the palate the taste is fresh, intense and complex and salty
As an aperitif, companion nuts, olives, ham (and then of course the real Bellota Iberico ham . The nortge tones of the ham as a result of the acorns that the pigs eat go great together with the Bellota ham)

Some things are better unfiltered. Fino en rama definitely is. Blatantly pure and fragrantly honest. She retains flavours and complexities ironed out in so many others. Exceptionally well to entice guests to sit down for a summer lunch in the garden.
Goes well with shellfish and fish, especially salty tastes (anchovies) or even raw (sashimi)
