Bodega El Maestro Sierra was founded in 1830 by one of the best drum makers of that time, master carpenter Jose Antonio Sierra. It wanted to make Sherry itself, which at the time, the 19th century, was primarily a noble affair. Nowadays El Maestro Sierra is undoubtedly one of the top of the almacenistas and owns one of the oldest stocks of sherry, a true treasure. Cellar master Juan Clavijo has been working here for more than 50 years according to the old traditions, with everything with the hand goes. He decides which wines become a Fino, which Amontillado etc. The unique location in Jerez, the purchase of only the best grapes from the best farmers in Jerez and the very old stock of Sherry (soleras of more than 100 years old) make this house into unique.
Fun fact: the label shows the hunt of the nobility for the fox (Maestro Sierra). The backlabel of each bottle states the month and year of bottling. Look here for more fun Sherry Facts. This 15-year-old Oloroso Sherry comes from vineyards north-northwest of Jerez, from the well-known calcareous white Albariza terroirs, consisting of lime, clay and pebble. Alba means white, the bottom is dazzling white (the sunlight is reflected) and very chalky. In the extreme case, the soil contains 80% lime. The lime soil is very porous and absorbs rainwater well, so that the vines find moisture in the deep soil layers during the dry periods.
Appellation: Denominación de Origen Jerez-Xérès Sherry. This sherry is made from Palomino Fino grapes and has aged for 15 years in American oak barrels according to the well-known Solera system.
Winemaker Ana Cabestrero Ortega has delivered a fine piece of work here. The style of this Oloroso is dry and ripe. On the nose beautiful aromas of overripe apple, syrup, smoked almonds. The sherry has a beautiful amber / mahogany color and in the mouth very tasteful with some bitter almond and apple syrup. An excellent combination with (smoked) and many other nuts, spicy hard cheeses or organ meats such as kidneys.
Beautiful Oloroso with a justified Parker rating of 91 points.
Once opened, if stored in a dark and cool place, it can be kept for 2 months.
