A dry Manzanilla from barrels in the bodega oriented towards the cool westerly Poniente wind, showing delicate flor development and a salty spine. The nose offers sea spray, green apple and subtle yeast complexity with a hint of citrus. On the palate it feels crisp and pure, with briny minerality and fine acidity supporting a lean yet expressive body. Structure is elegant and focused, finishing clean and gently persistent. Pair with chilled prawns, smoked almonds or a light anchovy and herb tart. Excellent with ceviche or grilled razor clams.
