An organic Manzanilla en Rama from certified vineyards on albariza soils aged in a young solera. The nose is bright with sea spray minerality, green apple, lime zest and a hint of iodine. The palate is bone dry, saline and lifted, with fine texture and clean acidity holding up a long, salty finish. This feels like the coast in a glass.
Serve with oysters, chilled prawns, sardines on toast or aged Manchego for a classic saline match.
