Still Wine
A dry white from Palomino grown on old albariza soils in the Santa Lucía vineyard, made with sun exposure (“asoleo”), fermented in old sherry casks and aged on lees before bottling. It feels expressive and profound, with notes of stone fruit, olive skin, honeyed lees and a saline, mineral drive. The palate is dry and savoury with medium body, lingering acidity and a chalky, almost tactile finish. This is a wine that rewards patience in the glass.
Pair with grilled sea bass, salt-crusted vegetables or a light goat cheese salad for balance.
