A dry, organic Palomino from Vino de la Tierra de Cádiz, aged around 12 months in old Manzanilla casks. Nose shows sea-breeze minerality, white fruit and a quiet nuttiness. The palate is taut and savoury, with a soft, slightly waxy texture, bright acidity and a gently salty edge. Structure is clean and linear, finishing long, smooth and dry with subtle oak seasoning.

Pair with grilled prawns, oysters or a sharp tomato salad with good olive oil. Also great with asparagus or fried fish.
